Legendary Udon Craftsman Selected by the Prefecture’s Residents: “Dried noodles allow you to enjoy the flavor of wheat even more”
This time, we compared 14 types of dried udon noodles that can be purchased at supermarkets and convenience stores. The checkpoints were: 1) cooking speed, 2) cost performance, 3) taste as is, 4) cold taste, and 5) hot taste. The overall ranking was determined by adding up the scores for each item out of a maximum of 10 points.
The judges were assisted by legendary Yoshitaka Yamashita, owner of the hugely popular Junteuchi Udon Yoshiya restaurant in Marugame City, Kagawa Prefecture, also known as “Udon Prefecture,” and winner of the 2017 Udon General Election, a contest chosen by Udon Prefecture residents. According to Yamashita, frozen udon noodles are made by freezing the noodles after they have been boiled, and they feel chewier than dried noodles. On the other hand, dried noodles, which are noodles that have not yet been boiled, are often made mainly from wheat flour, salt, and water, and contain fewer additives, so you can enjoy the natural flavor of the wheat.
